Ingredients

2 cups full-fat milk

1 cup heavy cream

1/2 cup sweetened condensed milk

1/2 cup sugar (adjust to taste)

1/4 cup powdered milk (optional for creaminess)

1 teaspoon ground cardamom

1/4 teaspoon salt

1/4 cup chopped pistachios (for garnish)

1/4 cup chopped almonds (for garnish)

A pinch of saffron strands (optional)

Instructions

Preparation of Milk Base: In a heavy-bottom saucepan, bring the full-fat milk and heavy cream to a gentle boil over medium heat, stirring occasionally to prevent it from burning.

Sweeter the Deal: Once it boils, reduce the heat to low and stir in the sweetened condensed milk and sugar. Continue cooking for about 10-15 minutes until the mixture thickens slightly.

Flavor Infusion: Add the ground cardamom and salt, stirring well to ensure the spices are evenly distributed. If using powdered milk, add it now for an extra creamy texture. Remove the saucepan from heat and let it cool slightly.

Chill and Blend: Allow the milk mixture to cool to room temperature, then pour it into a blender. Blend until smooth to ensure all ingredients are well combined.

Infusing Saffron: If you're using saffron strands, soak them in a tablespoon of warm water or milk for about 10 minutes. Stir this mixture into the kulfi mix for added flavor and color.

Freezing Time: Pour the kulfi mixture into kulfi molds or small cups. If you don't have molds, you can use an ice cube tray covered with plastic wrap. Insert sticks into the culfi and freeze for at least 6-8 hours or until completely solid.

Serving Suggestions: To serve, dip the molds in warm water for a few seconds to loosen the kulfis. Unmold the kulfi onto serving plates. Drizzle with a little honey or condensed milk if desired.

Garnish and Enjoy: Sprinkle the top with chopped pistachios and almonds before serving for a delightful crunch.
