Creamy Cajun Chicken Pasta

2 boneless, skinless chicken breasts, sliced into strips

8 oz fettuccine or penne pasta

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: 1/2 teaspoon red pepper flakes (for extra heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine (or penne) and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water for later.

    Season the Chicken: In a bowl, toss the sliced chicken with Cajun seasoning, salt, and pepper until well coated.

      Sauté the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, add the seasoned chicken strips. Cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until they begin to soften. Add the minced garlic and sauté for an additional minute until fragrant.

          Make the Sauce: Reduce heat to medium and pour in the chicken broth, scraping the bottom of the pan to deglaze and incorporate all the flavorful bits. Stir in the heavy cream, and bring the mixture to a gentle simmer.

            Combine: Gradually whisk in the grated Parmesan cheese until the sauce is creamy and smooth. If the sauce seems too thick, add some reserved pasta water until the desired consistency is reached.

              Add Chicken and Pasta: Return the cooked chicken to the skillet and add the drained pasta. Toss everything together to coat the pasta and chicken evenly in the creamy sauce. Adjust seasoning with additional salt, pepper, or red pepper flakes as desired.

                Serve: Plate the pasta and garnish with freshly chopped parsley. Optional: sprinkle additional Parmesan cheese on top before serving.
