Ingredients

8 slices of thick-cut brioche or challah bread

1 cup fresh strawberries, hulled and sliced

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

4 large eggs

1 cup whole milk

1 teaspoon ground cinnamon

1 tablespoon butter (for frying)

Maple syrup (for serving)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Filling: In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Stuff the Bread: Spread a generous amount of the cream cheese mixture on 4 slices of brioche. Top each with sliced strawberries, then place the remaining 4 slices of bread on top to create sandwiches. Gently press down to seal.

Make the Egg Mixture: In a shallow dish, whisk together the eggs, milk, cinnamon, and a pinch of salt until well combined.

Heat the Pan: In a non-stick skillet or griddle, melt the butter over medium heat.

Dip and Cook: Dip each stuffed sandwich into the egg mixture, ensuring both sides are well coated. Allow excess mixture to drip off. Place the sandwiches on the heated skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

Serve: Remove from the skillet and place on a serving platter. Drizzle with maple syrup and garnish with fresh mint leaves if desired.

Enjoy: Serve warm and enjoy your indulgent Cream Cheese Strawberry Stuffed French Toast Delight!
