Ingredients
  

2 cups shredded rotisserie chicken

1 cup corn kernels (roasted or canned)

1/2 cup mayonnaise

1/2 cup sour cream

1 cup crumbled cotija cheese

1/4 cup fresh cilantro, chopped

2 tbsp lime juice

1 tsp chili powder

1 tsp smoked paprika

Salt and pepper to taste

8 small corn tortillas

Optional toppings: avocado slices, jalapeños, extra cilantro, lime wedges

Prepare the Street Corn Sauce: In a medium bowl, combine mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper. Mix well until fully combined.

    Add the Corn: Fold in the corn kernels and half of the crumbled cotija cheese into the sauce. Stir until the corn is well coated.

      Combine with Chicken: In a large mixing bowl, combine the shredded chicken with the corn sauce. Mix until the chicken is evenly coated with the street corn mixture.

        Warm the Tortillas: In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are pliable. You can also wrap them in foil and heat in the oven if preferred.

          Assemble the Tacos: Take a warm tortilla and add a generous scoop of the street corn chicken mixture in the center. Top with additional cotija cheese, fresh cilantro, and any other optional toppings like avocado or jalapeños.
