Cowboy Tater Tot Casserole

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 cup salsa (mild or spicy, to your preference)

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 (32 oz) bag frozen tater tots

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.

      Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent (about 3-4 minutes).

        Stir in the black beans, corn, cream of mushroom soup, salsa, chili powder, cumin, salt, and pepper. Mix everything until well combined, allowing it to simmer for about 5 minutes.

          Spread the beef and veggie mixture evenly in a greased 9x13 inch casserole dish.

            Layer the frozen tater tots on top of the beef mixture, ensuring they cover the entire surface.

              Sprinkle the shredded cheddar cheese evenly over the tater tots.

                Bake in the preheated oven for 30-35 minutes or until the tater tots are golden and crispy and the cheese is melted and bubbly.

                  Carefully remove from the oven and garnish with fresh cilantro before serving.
