1 lb ground beef

1 cup diced onion

1 cup diced bell pepper (any color)

2 cloves garlic, minced

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 cup diced tomatoes (canned or fresh)

1 tablespoon taco seasoning

1 cup shredded cheddar cheese

1 cup sour cream

1 bag (32 oz) frozen tater tots

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Cook the beef: In a large skillet over medium heat, add the ground beef. Cook until browned, stirring occasionally to crumble the meat, about 5-7 minutes. Drain any excess fat.

      Sauté the vegetables: Add the diced onion, bell pepper, and minced garlic to the skillet with the ground beef. Cook for another 5 minutes until the vegetables are softened.

        Add the seasonings: Stir in the corn, black beans, diced tomatoes, taco seasoning, salt, and pepper. Mix well and let it simmer for about 3-5 minutes until heated through.

          Combine with sour cream: Remove the skillet from heat, and gently stir in the sour cream until fully incorporated into the mixture.

            Layer the casserole: In a greased 9x13 inch baking dish, spread the beef mixture evenly over the bottom. Sprinkle half of the shredded cheddar cheese on top. Then arrange the frozen tater tots in a single layer on top of the beef and cheese.

              Top it off: Sprinkle the remaining cheddar cheese over the tater tots.

                Bake the casserole: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the tater tots are golden brown and crispy.

                  Garnish and serve: Remove from the oven and let it cool slightly before serving. Garnish with chopped cilantro or green onions, if desired. Serve warm and enjoy!
