Cowboy Butter Steak Sliders

Ingredients
  

1 lb flank steak

Salt and black pepper, to taste

8 small slider buns

2 cups fresh arugula or baby spinach

1 large avocado, sliced

1 cup cherry tomatoes, halved

½ cup sliced pickles (dill or bread-and-butter)

½ cup Cowboy Butter (see recipe below)

For Cowboy Butter:

1 cup unsalted butter, softened

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Instructions
 

Prepare the Cowboy Butter:

    - In a medium mixing bowl, combine the softened butter, minced garlic, parsley, chives, Worcestershire sauce, Dijon mustard, smoked paprika, cayenne pepper, salt, and pepper.

      - Mix well until all ingredients are thoroughly incorporated.

        - Transfer the mixture onto a piece of parchment paper, roll it into a log, and refrigerate until firm (about 1-2 hours).

          Cook the Steak:

            - Preheat a grill or grill pan over medium-high heat.

              - Season the flank steak generously with salt and black pepper.

                - Grill the steak for about 5-7 minutes on each side for medium-rare, or longer to reach desired doneness.

                  - Once cooked, remove the steak from the grill and let it rest for 5 minutes before slicing thinly against the grain.

                    Assemble the Sliders:

                      - Toast the slider buns lightly on the grill for about 1-2 minutes, until golden brown.

                        - Spread a generous layer of Cowboy Butter on the bottom half of each bun.

                          - Layer the sliced steak on top of the butter, followed by arugula, avocado slices, cherry tomatoes, and pickles.

                            - Top with the other half of the slider bun and secure with a toothpick if needed.

                              Serve:
