Ingredients

4 boneless, skinless chicken thighs (about 1.5 lbs)

1 cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon smoked paprika

1 tablespoon onion powder

1 tablespoon dried parsley

1 teaspoon cayenne pepper (adjust to taste)

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

Zest and juice of 1 lemon

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Cowboy Butter: In a medium bowl, mix the softened butter with minced garlic, smoked paprika, onion powder, dried parsley, cayenne pepper, Worcestershire sauce, Dijon mustard, lemon zest, and lemon juice. Combine well until all ingredients are evenly incorporated. Season with salt and black pepper to taste. Set aside.

Marinate the Chicken: Season the chicken thighs with salt and black pepper. Place them in a large resealable bag or a shallow dish. Add half of the Cowboy Butter to the chicken, ensuring each piece is coated. Marinate in the refrigerator for at least 30 minutes (can marinate up to overnight for deeper flavor).

Cook the Chicken: Preheat your grill or skillet over medium-high heat. If grilling, oil the grate lightly. Remove the chicken from the marinade, allowing excess butter to drip off. Cook the chicken thighs for about 5-7 minutes per side or until they reach an internal temperature of 165°F (75°C), using a meat thermometer for accuracy.

Finish with Cowboy Butter: In the final minute of cooking, place a dollop of the remaining Cowboy Butter on top of each chicken thigh and let it melt into the chicken.

Serve: Once cooked, remove the chicken from the heat and let it rest for a few minutes. Garnish with freshly chopped parsley and serve with your choice of sides, such as cornbread, grilled vegetables, or a fresh salad.
