2 cups fresh baby spinach, washed and dried

1 cup cottage cheese (low-fat or full-fat as per preference)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/2 cucumber, diced

1/4 cup walnuts, chopped (or any nuts of choice)

1 avocado, diced

2 tablespoons extra virgin olive oil

1 tablespoon lemon juice (freshly squeezed)

Salt and pepper to taste

1 tablespoon fresh dill or parsley, chopped (optional for garnish)

Instructions
