Ingredients
  

2 cups of cottage cheese (preferably low-fat)

1 large cucumber, diced

1/2 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and black pepper to taste

Optional: 1/4 avocado, diced for creaminess

Optional: 1/4 cup crumbled feta cheese for added flavor

Instructions
 

Start by preparing the vegetables. Wash and dice the cucumber into small cubes. Halve the cherry tomatoes and finely chop the red onion.

    In a large mixing bowl, combine the cottage cheese, diced cucumber, cherry tomatoes, red onion, and dill.

      In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper until well combined.

        Pour the dressing over the cottage cheese mixture and gently stir until everything is evenly coated.

          If desired, fold in the diced avocado and crumbled feta cheese for extra flavor and creaminess.

            Taste and adjust seasoning, adding more salt, pepper, or lemon juice if necessary.
