Ingredients

2 cups cottage cheese

1 large apple (Granny Smith or Honeycrisp), diced

1/4 cup walnuts, chopped

1/4 cup dried cranberries

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Fresh mint leaves for garnish

Instructions

In a large mixing bowl, combine the cottage cheese, honey (or maple syrup), vanilla extract, and cinnamon. Mix thoroughly until well combined and creamy.

Add the diced apple, chopped walnuts, and dried cranberries to the bowl. Gently fold the ingredients together, taking care not to break up the apple pieces too much.

Taste the mixture and adjust sweetness by adding more honey or maple syrup if desired.

Transfer the salad to a serving dish or individual bowls.

Garnish with fresh mint leaves for a refreshing touch.
