2 cups masa harina (corn flour)

1 1/2 cups water, warm

1 tsp salt

1/2 tsp baking powder

1 tbsp vegetable oil or melted lard

Corn husks (about 12-15, soaked in warm water for 30 minutes)

Optional fillings: cheese, beans, or shredded meat

A dollop of sour cream and salsa for serving

Instructions
 

Prepare the Corn Husks: Drain the soaked corn husks and pat them dry. Select the largest and strongest husks for wrapping your corundas.

    Make the Masa Mixture: In a large bowl, combine masa harina, baking powder, and salt. Gradually add warm water and the vegetable oil or lard. Mix until a soft, pliable dough forms.

      Shape the Corundas: Take a corn husk and place it flat on a clean surface. Scoop about 1/4 cup of masa dough into the center, spreading it into a triangular shape that slightly covers the center. Add a small amount of your choice of filling (if using) in the middle.

        Wrap the Corundas: Fold the sides of the corn husk over the masa and then bring the pointed end up to enclose the filling. Fold the bottom end of the husk to secure everything.

          Steam the Corundas: Arrange the wrapped corundas upright in a steamer basket, ensuring they are standing and not touching each other. Steam over simmering water for about 45 minutes, or until the masa is firm and cooked through.

            Serve and Enjoy: Carefully unwrap the corundas. Serve them warm with a dollop of sour cream and your favorite salsa on the side.
