Cornbread Cowboy Casserole

Ingredients
  

1 lb ground beef or turkey

1 small onion, diced

1 bell pepper, diced (any color)

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

1 box (8.5 oz) cornbread mix

1 egg

1/3 cup milk

1 cup shredded cheddar cheese

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, brown the ground beef or turkey, breaking it apart as it cooks. Drain excess grease if necessary.

      Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender, about 5-7 minutes.

        Stir in the black beans, corn, diced tomatoes (with their juices), chili powder, cumin, salt, and pepper. Let the mixture simmer for about 5 minutes, stirring occasionally.

          While the meat mixture is simmering, prepare the cornbread batter. In a bowl, combine the cornbread mix, egg, and milk. Mix until just combined; do not overmix.

            In a greased 9x13-inch baking dish, spread the meat and vegetable mixture evenly on the bottom.

              Pour the cornbread batter over the meat mixture, spreading it gently to cover evenly.

                Sprinkle the shredded cheddar cheese on top of the cornbread layer.

                  Bake in the preheated oven for 25-30 minutes or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.

                    Remove from the oven and let it cool for about 5 minutes. Garnish with fresh cilantro or green onions if desired before serving.
