Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

1/2 cup honey

1 tablespoon apple cider vinegar

1 tablespoon soy sauce

1 teaspoon black pepper

1 teaspoon smoked paprika

Salt to taste

1 tablespoon olive oil

For the Mac and Cheese:

8 oz elbow macaroni

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Chopped parsley for garnish (optional)

Instructions

Marinate the Chicken:

    - In a bowl, whisk together the honey, apple cider vinegar, soy sauce, black pepper, smoked paprika, and a pinch of salt.

      - Add the chicken breasts and coat them well. Let marinate for at least 30 minutes in the refrigerator.

        Cook the Chicken:

          - Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade (reserving the marinade) and cook for about 6-7 minutes on each side until golden brown and cooked through.

            - Pour the reserved marinade over the chicken and simmer for an additional 2-3 minutes until the sauce thickens slightly. Remove from heat, slice the chicken, and set aside.

              Prepare the Mac and Cheese:

                - In a large pot, cook the elbow macaroni according to package instructions. Drain and set aside.

                  - In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes until golden.

                    - Gradually whisk in the milk, ensuring there are no lumps. Continue to stir until the mixture thickens, about 5-7 minutes.

                      - Reduce heat to low and slowly add in the cheddar, mozzarella, and Parmesan cheese. Stir until melted and smooth.

                        - Season with garlic powder, onion powder, salt, and pepper to taste.

                          Combine:

                            - Fold the cooked macaroni into the cheese sauce until evenly coated.

                              - Place the mac and cheese in a serving dish, and top with the sliced honey pepper chicken.

                                Garnish & Serve:

                                  - Sprinkle with chopped parsley, if desired, for added freshness and color. Serve immediately and enjoy!
