For the Dough:

4 cups all-purpose flour

1/2 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1/2 teaspoon salt

3/4 cup warm milk (110°F or 45°C)

1/2 cup brewed coffee (cooled to room temperature)

1/4 cup unsalted butter (melted)

2 large eggs

For the Filling:

1/2 cup brown sugar (packed)

2 tablespoons ground cinnamon

1/4 cup unsalted butter (softened)

1/2 cup chopped walnuts (optional)

For the Glaze:

1 cup powdered sugar

2 tablespoons brewed coffee

1 teaspoon vanilla extract

Instructions
 

Activate the Yeast: In a small bowl, combine warm milk, 1 teaspoon of sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Prepare the Dough: In a large mixing bowl, whisk together 4 cups of flour, 1/2 cup sugar, and salt. Make a well in the center and add the activated yeast mixture, brewed coffee, melted butter, and eggs. Mix until a soft dough forms.

      Knead: Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Make the Filling: In a small bowl, combine brown sugar and cinnamon. Set aside.

          Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 18x12 inches).

            Spread Filling: Spread the softened butter over the dough, then sprinkle the cinnamon-sugar mixture evenly across the surface. If using walnuts, sprinkle them on top.

              Roll and Cut: Starting from one long edge, roll the dough tightly into a log. Cut the log into 12 equal pieces and place them in a greased 9x13 inch baking dish.

                Second Rise: Cover the rolls loosely with plastic wrap and let them rise again for about 30-45 minutes, until puffy.

                  Preheat Oven: Preheat your oven to 350°F (175°C).

                    Bake: Bake the cinnamon rolls for 25-30 minutes or until golden brown. If they start to brown too quickly, cover with foil.

                      Make the Glaze: In a medium bowl, whisk together powdered sugar, brewed coffee, and vanilla extract until smooth.

                        Glaze the Rolls: After removing the rolls from the oven, let them cool for about 5 minutes, then drizzle the coffee glaze over the warm rolls.
