1 cup all-purpose flour

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup packed brown sugar

1 large egg

1 tsp vanilla extract

1 cup sweetened shredded coconut

3/4 cup crushed pineapple, drained (reserve juice)

1/2 cup chopped macadamia nuts (optional)

1/2 tsp coconut extract (optional)

1 cup white chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer until light and fluffy.

        Add Egg and Extracts: Add the egg and vanilla extract to the butter mixture. Mix until fully combined. If using coconut extract, add that here as well.

          Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.

            Fold in Mix-Ins: Gently fold in the shredded coconut, crushed pineapple, macadamia nuts (if using), and white chocolate chips (if using) with a spatula. Ensure everything is evenly distributed.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spaced about 2 inches apart.

                Bake: Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and the centers are set.

                  Cool: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Then transfer them to a wire rack to cool completely.
