1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/4 cup cream cheese, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1/4 teaspoon coconut extract (optional)

1 cup white chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, shredded coconut, baking powder, and salt until well combined. Set aside.

Cream Butter and Cheeses: In a large mixing bowl, beat the softened butter and cream cheese until smooth and creamy. Gradually add granulated sugar and brown sugar, mixing until light and fluffy.

Incorporate Wet Ingredients: Add the egg, fresh lemon juice, lemon zest, vanilla extract, and coconut extract (if using) to the butter and cheese mixture. Mix until evenly combined.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. If you like, fold in the white chocolate chips for an extra treat!

Scoop Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden, and the centers are still a bit soft.

Cool Down: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Optional Dusting: Once cooled, you can dust the cookies with powdered sugar for added sweetness and presentation.
