Ingredients
  

For the Cookie Base:

1 cup all-purpose flour

1/2 cup coconut flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

Zest of 1 lemon

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 cup shredded coconut

For the Coconut Topping:

1/2 cup sweetened shredded coconut

Instructions
 

Prepare the Cheesecake Filling:

    - In a medium bowl, beat together softened cream cheese, granulated sugar, lemon juice, vanilla extract, and shredded coconut until smooth and creamy. Set aside.

      Make the Cookie Dough:

        - In a mixing bowl, whisk together all-purpose flour, coconut flour, baking soda, and salt.

          - In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

            - Beat in the egg and vanilla extract, followed by the lemon zest until everything is well combined.

              - Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

                Assemble the Cookies:

                  - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

                    - Scoop a tablespoon of cookie dough and flatten it slightly in your palm. Add a teaspoon of the cheesecake filling in the center and wrap the cookie dough around it, sealing it completely.

                      - Roll the filled cookie into a ball and roll it in sweetened shredded coconut to coat. Place on the prepared baking sheet, spacing them about 2 inches apart.

                        Bake the Cookies:
