2 cups cooked chicken breast, diced

4 slices of crisp bacon, cooked and crumbled

2 hard-boiled eggs, chopped

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 cup blue cheese, crumbled

1/4 cup red onion, thinly sliced

4 slices of whole grain bread

1/4 cup mayonnaise

1 tablespoon Dijon mustard

Salt and pepper to taste

Prepare the Dressing: In a small bowl, mix the mayonnaise and Dijon mustard until well combined. Season with salt and pepper to taste.

    Prep the Veggies: Slice the avocado, and chop the romaine lettuce, hard-boiled eggs, and cherry tomatoes. Thinly slice the red onion.
