Ingredients

3 large eggs

3/4 cup granulated sugar

1/2 cup unsalted butter, melted and cooled

1 tablespoon vanilla extract

1 tablespoon anise extract (or substitute with almond extract for a different flavor)

2 cups all-purpose flour

2 teaspoons baking powder

Powdered sugar (for dusting)

Instructions

In a large mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale and slightly thickened. This should take about 2-3 minutes.

Stir in the melted butter, vanilla extract, and anise extract until well combined.

In another bowl, whisk together the all-purpose flour and baking powder. Gradually add this dry mixture to the wet mixture, stirring until just combined. The batter should be thick but pourable.

Preheat a pizzelle maker according to the manufacturer's instructions. Lightly grease the plates if necessary (some pizzelle makers are non-stick).

Pour about a tablespoon of batter onto the center of each pizzelle mold. Close the lid and cook for about 30-45 seconds, or until golden brown, depending on your pizzelle maker.

Carefully remove the pizzelle using a fork or tongs (be cautious, they will be hot!) and place them on a wire rack to cool.

Once cooled, dust the pizzelle with powdered sugar, if desired.

Enjoy your classic pizzelle with a cup of coffee or as a delightful dessert!
