1 loaf of day-old brioche or challah bread

4 large eggs

1 cup milk (whole or your choice)

1/2 cup granulated sugar

1 tablespoon vanilla extract

2 teaspoons ground cinnamon (plus more for sprinkling)

1/4 teaspoon salt

1/4 cup melted butter (to coat the muffin pan)

1/2 cup brown sugar (for cinnamon sugar topping)

Optional: maple syrup for serving

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin pan with melted butter or cooking spray.

    Prepare the Bread: Tear or cut the brioche or challah bread into bite-sized pieces and place them in a large mixing bowl.

      Make the Custard: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

        Combine: Pour the egg mixture over the torn bread pieces. Gently fold the bread into the mixture until fully coated, allowing it to soak for about 10-15 minutes.

          Fill the Muffin Pan: Using a spoon or ice cream scoop, fill each muffin cup about 3/4 full with the bread-custard mixture.
