Ingredients

8 slices of day-old bread (such as brioche or challah), cut into cubes

3 large eggs

1 cup milk

1/4 cup heavy cream

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/2 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

1/4 cup unsalted butter, melted

1/4 cup brown sugar

2 tablespoons granulated sugar (for dusting)

Extra ground cinnamon (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a standard 12-cup muffin tin.

Prepare the Bread Cubes: In a large mixing bowl, combine the bread cubes and chopped nuts (if using). Toss them gently to distribute the nuts evenly throughout the bread cubes.

Make the Custard Mixture: In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and salt until thoroughly combined.

Combine Bread and Custard: Pour the custard mixture over the bread cubes. Gently fold the mixture until the bread is well-coated. Allow it to sit for about 10-15 minutes, so the bread absorbs the custard.

Distribute and Top: Divide the mixture evenly among the prepared muffin cups. In a small bowl, mix the melted butter with brown sugar and sprinkle it over the top of each muffin for a sweet crust.

Bake: Bake in the preheated oven for 20-25 minutes or until the muffins puff up and are golden brown on top.

Cool and Dust: Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. Once cool, dust with granulated sugar mixed with extra ground cinnamon for added flavor.

Serve: Enjoy the Cinnamon Sugar French Toast Muffins warm or at room temperature. They are perfect for breakfast, brunch, or even a sweet snack!
