Churro Cheesecake Donut Cookies

For the Cookie Dough:

2½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Cheesecake Filling:

8 oz cream cheese, softened

¼ cup granulated sugar

1 large egg yolk

1 teaspoon vanilla extract

1 teaspoon lemon juice

For the Cinnamon Sugar Topping:

½ cup granulated sugar

1 tablespoon ground cinnamon

½ cup unsalted butter, melted

Instructions
 

Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese, ¼ cup sugar, egg yolk, vanilla extract, and lemon juice until smooth and creamy. Set aside.

    Make the Cookie Dough: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

      Assemble the Cookies: Take about 2 tablespoons of cookie dough and flatten it into a disc. Place about 1 teaspoon of the cheesecake filling in the center and cover it with another 2 tablespoons of cookie dough, sealing the edges to form a ball. Repeat with the remaining dough and filling.

        Bake the Cookies: Place the stuffed dough balls on the prepared baking sheet, leaving enough space between them to spread. Bake for 12-15 minutes or until the edges are lightly golden. Remove from the oven and allow them to cool on the sheet for 5 minutes.
