Ingredients

For the Cookie Dough:

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1/4 cup sour cream

1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

1/4 cup melted butter (for brushing)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with the powdered sugar, sour cream, and vanilla extract until smooth. Set aside.

Prepare the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Assemble the Cookies: Take a tablespoon of the cookie dough and flatten it in the palm of your hand. Place about a teaspoon of the cheesecake filling in the center. Fold the dough around the filling to encase it completely and roll into a ball. Place the cookie dough balls on the prepared baking sheets, leaving space between each.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers will look slightly underbaked, but they will continue to cook as they cool.

Cinnamon Sugar Coating: While the cookies are baking, mix together the granulated sugar and cinnamon in a small bowl. Once cookies are finished baking, allow them to cool for a few minutes before brushing the tops with melted butter and rolling them in the cinnamon sugar mixture.

Cool and Serve: Let the cookies cool completely on a wire rack. Enjoy these delightful Churro Cheesecake Cookies, perfect for sharing or indulging on your own!
