Chorizo Breakfast Hash with Bacon and Smashed Potato

Ingredients
  

2 medium russet potatoes

4 ounces chorizo sausage, casings removed

4 strips of bacon, chopped

1 medium onion, diced

1 red bell pepper, diced

3 large eggs

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Olive oil for cooking

Instructions
 

Boil the Potatoes: Place potatoes in a pot and cover with cold water. Bring to a boil and cook for about 15-20 minutes or until fork-tender. Drain and let cool slightly.

    Smashed Potatoes: Once cool enough to handle, gently smash the potatoes using a fork or the bottom of a glass, keeping them intact but slightly flattened. Set aside.

      Cook Bacon: In a large skillet, add the chopped bacon over medium heat. Cook until crispy, about 5-7 minutes. Remove the bacon and leave about 1 tablespoon of rendered fat in the skillet.

        Sauté Vegetables: In the same skillet, add the diced onion and red bell pepper to the bacon fat. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.

          Add Chorizo: Crumble the chorizo into the skillet and cook, stirring occasionally, until browned and cooked through, about 5-6 minutes.

            Combine Ingredients: Return the bacon to the skillet, and add the paprika, salt, and pepper, stirring to combine.

              Add Smashed Potatoes: Carefully place the smashed potatoes into the skillet in a single layer. Cook for an additional 3-4 minutes until crispy on the bottom, then gently flip them to crisp the other side.

                Cook Eggs: In a separate small skillet, fry the eggs to your liking (sunny-side up, over easy, etc.).

                  Serve: Plate the chorizo breakfast hash and top each serving with a fried egg. Garnish with fresh parsley and enjoy your hearty breakfast!
