Chorizo Baked Beans on Toast

Ingredients
  

200g chorizo, diced

1 can (400g) of cannellini beans, drained and rinsed

1 can (400g) of chopped tomatoes

1 medium onion, finely chopped

2 cloves of garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1 tbsp olive oil

Salt and pepper, to taste

Fresh parsley, for garnish

4 slices of thick cut bread (sourdough or whole grain recommended)

Instructions
 

In a large pan, heat the olive oil over medium heat. Add the diced chorizo and sauté for about 5 minutes, or until it starts to brown and release its oils.

    Add the chopped onion to the pan and cook for 3-4 minutes until it becomes soft and translucent. Then, stir in the minced garlic and cook for another minute, being careful not to let it burn.

      Sprinkle in the smoked paprika and ground cumin, stirring to combine the spices with the chorizo and onion mixture.

        Pour in the chopped tomatoes and add the rinsed cannellini beans. Stir everything together and bring the mixture to a simmer. Season with salt and pepper to taste.

          Reduce the heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld together, stirring occasionally.

            While the bean and chorizo mixture is simmering, toast the slices of bread until golden and crispy.

              Once the chorizo baked beans are cooked, taste and adjust the seasoning if needed. Remove from heat.

                To serve, spoon the chorizo baked beans generously over the toasted bread. Garnish with freshly chopped parsley.
