Chocolate Spinach Muffins

1 cup fresh spinach, finely chopped

1 cup all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup buttermilk

1/2 cup dark chocolate chips

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Whisk together until well mixed.

      In another bowl, beat the eggs, granulated sugar, brown sugar, vegetable oil, vanilla extract, and buttermilk until smooth and creamy.

        Fold the finely chopped spinach into the wet ingredients, ensuring it's evenly distributed.

          Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

            Gently fold in the dark chocolate chips, reserving a few to sprinkle on top of the muffins.

              Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle the reserved chocolate chips on top of each muffin.

                Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                  Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
