For the Crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Cheesecake Layer:

16 oz cream cheese, softened

½ cup granulated sugar

½ tsp vanilla extract

2 large eggs

1/2 cup sour cream

For the Chocolate Mousse:

1 cup heavy whipping cream

8 oz semi-sweet chocolate, chopped

2 large eggs, separated

¼ cup granulated sugar

Pinch of salt

For Garnish:

Whipped cream

Chocolate shavings

Fresh berries

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a bowl, mix chocolate cookie crumbs, melted butter, and sugar until combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove and let cool.

          Make the Cheesecake Layer:

            - In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.

              - Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the sour cream until well blended.

                - Pour the cheesecake mixture onto the cooled crust and smooth the top. Bake for 50-60 minutes, or until the center is set but still slightly wobbly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

                  Prepare the Chocolate Mousse:

                    - In a saucepan, melt the chopped chocolate over low heat until smooth. Remove from heat and let it cool slightly.

                      - In another bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add in the sugar and beat until stiff peaks form.

                        - In a separate bowl, whip the heavy cream until stiff peaks form.

                          - Gently fold the melted chocolate into the whipped cream until combined. Then, carefully fold in the egg whites, making sure not to deflate the mixture.

                            Assemble the Cheesecake:

                              - Once the cheesecake has cooled completely, spread the chocolate mousse evenly over the top. Refrigerate for at least 4 hours, or overnight for best results.

                                Serve:

                                  - To serve, remove the cheesecake from the springform pan. Top with whipped cream, chocolate shavings, and fresh berries as desired.
