Chocolate Granola Recipe with Pistachios + Sea Salt

2 cups rolled oats

1/2 cup raw pistachios, roughly chopped

1/2 cup unsweetened cocoa powder

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon sea salt

1/4 cup dark chocolate chips or chunks

Optional: 1/4 cup dried fruit (such as cranberries or cherries)

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pistachios, cocoa powder, and sea salt. Stir well to ensure even distribution.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract until well combined.

        Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir until the oats and nuts are evenly coated with the chocolate mixture.

          Spread on Baking Sheet: Transfer the granola mixture to the prepared baking sheet. Spread it out evenly in a thin layer, pressing it down slightly so it clumps together.

            Bake: Place the baking sheet in the oven and bake for 25-30 minutes, stirring every 10 minutes to ensure even baking. Bake until the granola is crispy and a deep brown color.

              Cool and Add Chocolate: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, stir in the dark chocolate chips or chunks, allowing them to melt slightly from the residual heat.

                Store: Once cooled completely, store the granola in an airtight container at room temperature for up to two weeks.
