For the Cookies:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

For the Chocolate Coating:

8 oz dark chocolate chips (or chocolate melting wafers)

2 tablespoons coconut oil (optional, for a smoother finish)

For the Strawberry Topping:

12 fresh strawberries, washed and dried

1 tablespoon powdered sugar (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

      Prepare the Cookie Dough:

        In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes.

          Add Eggs and Vanilla:

            Beat in the eggs, one at a time, followed by the vanilla extract, mixing until fully incorporated.

              Combine Dry Ingredients:

                In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.

                  Mix In Chocolate Chips:

                    Fold in the chocolate chips until evenly distributed throughout the dough.

                      Scoop and Bake:

                        Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

                          Cool Cookies:

                            Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                              Prepare Chocolate Coating:

                                While the cookies cool, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. If using, stir in coconut oil to achieve a smoother consistency.

                                  Dip Strawberries:

                                    Dip the clean, dry strawberries halfway into the melted chocolate and place them on a parchment-lined tray to set. Sprinkle with powdered sugar if desired.

                                      Assemble Treats:

                                        Once the cookies have cooled completely, take each cookie and carefully dip one edge into the remaining melted chocolate. Allow excess chocolate to drip off before placing the cookie back on the wire rack.

                                          Finish with Strawberries:

                                            Place a chocolate-dipped strawberry on top of each cookie while the chocolate is still wet to ensure they stick.

                                              Let Set:

                                                Allow cookies to sit at room temperature or refrigerate for about 30 minutes until everything is set.
