Ingredients
  

For the Churro Dough:

1 cup water

1/2 cup unsalted butter

1 tablespoon brown sugar

1/4 teaspoon salt

1 cup all-purpose flour

3 large eggs

For the Chocolate Filling:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

1/2 teaspoon vanilla extract

For the Coating:

1/2 cup granulated sugar

1 teaspoon ground cinnamon

Instructions
 

Prepare the Churro Dough:

    - In a medium saucepan, combine water, butter, brown sugar, and salt. Bring to a boil over medium heat.

      - Once boiling, remove from heat and stir in the flour until the mixture forms a ball.

        - Allow it to cool slightly, then beat in eggs one at a time until fully incorporated.

          Make the Chocolate Filling:

            - In a small saucepan, heat the heavy cream over low heat until just simmering.

              - Remove from heat and stir in the chocolate chips and vanilla extract. Mix until smooth and entirely melted. Set aside to cool slightly.

                Shape the Pies:

                  - Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

                    - Using a piping bag, pipe small circles of churro dough (about 2 inches in diameter) onto the prepared baking sheet, leaving space in between.

                      - Using the back of a spoon, create a slight indentation in the center of each circle.

                        Fill the Pies:

                          - Spoon a small amount of the chocolate filling into each indentation.

                            - Top with another circle of churro dough, gently pressing the edges to seal.

                              Bake the Churro Pies:

                                - Bake in the preheated oven for about 20-25 minutes or until golden brown and puffed.

                                  Prepare the Coating:

                                    - While the churro pies are baking, mix the sugar and cinnamon in a shallow dish.

                                      Coat the Pies:

                                        - Once baked, remove the churro pies from the oven and allow them to cool for a few minutes. Then roll them in the cinnamon sugar mixture until fully coated.
