2 ripe bananas, mashed

1/3 cup melted coconut oil

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 cup all-purpose flour

1/2 cup chocolate chips (dark or semi-sweet)

1/4 cup walnuts or pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the mashed bananas and melted coconut oil. Mix until well combined.

      Stir in the brown sugar and granulated sugar until smooth.

        Add the egg and vanilla extract, mixing until fully incorporated.

          In a separate bowl, whisk together the baking soda, salt, and all-purpose flour.

            Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Do not overmix!

              Fold in the chocolate chips and nuts (if using) until evenly distributed.

                Pour the batter into the prepared baking pan and spread it evenly.

                  Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                    Allow the bars to cool in the pan on a wire rack for about 10 minutes before transferring them to a wire rack to cool completely.

                      Cut into squares or bars and enjoy!
