1 ripe banana, mashed

2 tablespoons cacao powder (or cocoa powder)

2 tablespoons maple syrup (or agave syrup)

1 teaspoon vanilla extract

1 ½ cups almond milk (or any plant-based milk)

¼ cup chia seeds

Pinch of sea salt

Fresh banana slices for garnish

Dark chocolate shavings (vegan, if desired) for garnish

Instructions
 

In a large bowl, combine the mashed banana, cacao powder, maple syrup, vanilla extract, and sea salt. Mix until well-combined and smooth.

    Pour in the almond milk gradually, whisking continuously to ensure the cacao powder is fully dissolved and everything is well mixed.

      Slowly stir in the chia seeds until they are evenly distributed throughout the mixture.

        Cover the bowl with plastic wrap or transfer the mixture to individual serving jars, and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and gel up.

          Before serving, give the pudding a good stir. If it’s too thick for your liking, you can add a splash more of almond milk to reach your desired consistency.
