1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

2 medium onions, thinly sliced

3 cloves garlic, minced

1-inch piece ginger, grated or minced

1 bell pepper (red or green), thinly sliced

2 green onions, chopped

1 tablespoon sesame oil

Salt and pepper to taste

Optional: red pepper flakes for heat

Marinate the Beef: In a medium bowl, combine the sliced flank steak with soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for about 15-30 minutes for deeper flavor.

    Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

      Cook the Beef: Add the marinated beef to the skillet in a single layer. Stir-fry for about 3-5 minutes or until the beef is browned and cooked through. Remove the beef from the skillet and set it aside.

        Sauté Onions: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the sliced onions and sauté for about 3-4 minutes or until they become translucent.

          Add Aromatics: Stir in the minced garlic and grated ginger, sauté for another minute until fragrant.

            Incorporate Vegetables: Add the sliced bell pepper and cook for an additional 2-3 minutes, allowing it to soften slightly.

              Combine: Return the cooked beef to the skillet. Drizzle sesame oil over the mixture. Stir well to combine all ingredients and heat through for another 1-2 minutes.

                Final Season: Season with salt, pepper, and red pepper flakes (if using) to taste. Toss in the chopped green onions just before serving.

                  Serve: Serve hot over steamed rice or noodles, garnished with extra green onions if desired.
