Chinese Beef and Broccoli

Ingredients
  

1 lb flank steak, thinly sliced against the grain

2 cups broccoli florets

3 tablespoons vegetable oil (divided)

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

1 teaspoon sugar

1/2 cup beef broth

Salt and pepper to taste

Optional: sesame seeds for garnish

Cooked rice, for serving

Instructions
 

Marinate the Beef: In a medium bowl, combine sliced flank steak, soy sauce, cornstarch, and a pinch of salt and pepper. Let it marinate for at least 15-30 minutes.

    Blanch the Broccoli: In a large pot of boiling water, add the broccoli florets and blanch for 1-2 minutes until bright green. Remove and plunge into an ice bath to stop the cooking process. Drain and set aside.

      Prepare the Sauce: In a small bowl, mix together the oyster sauce, sesame oil, sugar, and beef broth. Set aside.

        Stir-Fry the Beef: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Sear for 1-2 minutes without stirring. Flip and cook for another minute or until browned and just cooked through. Remove beef and set aside.

          Stir-Fry Garlic and Ginger: In the same skillet, add the remaining tablespoon of oil. Add minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

            Combine Broccoli and Sauce: Add the blanched broccoli to the skillet, along with the prepared sauce. Stir to combine and cook for an additional 2-3 minutes until the sauce slightly thickens.

              Bring it All Together: Return the cooked beef to the skillet and toss everything together until well mixed and heated through, about 1-2 minutes. Taste and adjust seasoning if necessary.

                Serve: Serve the beef and broccoli hot over cooked rice, garnished with sesame seeds if desired.
