Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

4 cups broccoli florets

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, minced

1 tablespoon sesame oil

1 cup beef broth or water

1 teaspoon sugar

Salt and pepper to taste

Cooked rice or noodles for serving

Instructions
 

In a bowl, mix the thinly sliced beef with soy sauce, oyster sauce, and cornstarch. Let it marinate for at least 15 minutes.

    While the beef marinates, blanch the broccoli florets in boiling water for 2-3 minutes until bright green but still crisp. Drain and set aside.

      Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the marinated beef in a single layer, cooking for about 2-3 minutes on each side until browned. Remove the beef and set aside.

        In the same wok, add the remaining tablespoon of vegetable oil. Toss in the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant.

          Pour in the beef broth (or water), followed by the sugar. Stir to combine and bring to a simmer.

            Add the blanched broccoli back into the wok along with the cooked beef. Drizzle with sesame oil and toss everything together, cooking for an additional 2-3 minutes until heated through and the sauce slightly thickens. Season with salt and pepper to taste.

              Serve the beef and broccoli stir-fry hot over cooked rice or noodles.
