Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) dark red kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 cups beef broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

3 cups elbow macaroni

2 cups shredded sharp cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Cook the meat: In a large skillet or pot, brown the ground beef over medium heat until fully cooked. Drain any excess grease.

    Add vegetables: Stir in the chopped onion, minced garlic, and red bell pepper; sauté until the vegetables are tender, about 5 minutes.

      Mix in the spices: Add the chili powder, cumin, smoked paprika, salt, and pepper. Stir to coat the meat and vegetables in the spices, cooking for another minute.

        Incorporate beans and tomatoes: Mix in the kidney beans and diced tomatoes with green chilies. Stir well to combine.

          Add broth and pasta: Pour in the beef broth and bring the mixture to a gentle boil. Stir in the elbow macaroni, reduce the heat to low, and cover. Simmer for about 10-12 minutes or until the pasta is al dente, stirring occasionally.

            Melt the cheese: Once the pasta is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
