8 oz linguini pasta

2 boneless, skinless chicken breasts, sliced into thin strips

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

1/2 cup dry white wine (like Sauvignon Blanc)

1 medium lemon, zested and juiced

1/2 cup chicken broth

1/4 cup freshly grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Instructions
 

Cook the Linguini: In a large pot, bring salted water to a boil. Add linguini and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Chicken: In a large skillet over medium heat, heat 2 tablespoons of butter and 1 tablespoon of olive oil. Season the chicken strips with salt and pepper. Add them to the skillet and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining 3 tablespoons of olive oil and the minced garlic. Sauté for about 1 minute until fragrant (be careful not to burn the garlic). Add red pepper flakes, then pour in the white wine. Let it simmer for 2-3 minutes until slightly reduced.

        Add Broth and Lemon: Stir in the chicken broth, lemon juice, and lemon zest. Continue to simmer for another minute. If the sauce seems too thick, add a bit of the reserved pasta water to reach your desired consistency.

          Combine Chicken and Pasta: Return the cooked chicken to the skillet, stir to combine, then add the linguini. Toss everything together to ensure the pasta is coated well in the sauce. Add the remaining 2 tablespoons of butter and Parmesan cheese, stirring until the butter has melted.

            Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and adjust seasoning with salt and pepper if needed. Plate your Chicken Scampi Linguini and top with additional Parmesan if desired. Enjoy your delicious meal!
