1 lb ground chicken

1 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

1/2 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1 tbsp fresh parsley, chopped

2 tbsp olive oil, divided

2 cups bell peppers (red, yellow, green), sliced

1 medium zucchini, sliced

1 red onion, sliced

1 cup cherry tomatoes, halved

1 tsp balsamic vinegar (optional)

Prepare the Chicken Sausage: In a large bowl, combine the ground chicken, garlic powder, onion powder, oregano, paprika, black pepper, salt, and fresh parsley. Mix well until all ingredients are evenly distributed.

    Shape the Sausages: Form the chicken mixture into sausage shapes, about 4 inches long and 1 inch thick. You should get about 6 sausages.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Roast the Vegetables: On a large baking sheet, combine the sliced bell peppers, zucchini, red onion, and cherry tomatoes. Drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper to taste. Toss until the vegetables are evenly coated.

          Add the Sausages: Make space on the baking sheet for the sausages and place them among the vegetables. Drizzle the remaining tablespoon of olive oil over the sausages. Optionally, drizzle balsamic vinegar over the veggies for added flavor.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the sausages are cooked through (internal temperature should reach 165°F) and the vegetables are tender and slightly caramelized.
