Ingredients

1 pound boneless, skinless chicken breasts

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 cup all-purpose flour

2 large eggs

1 cup marinara sauce (plus extra for serving)

1 1/2 cups shredded mozzarella cheese

12 slider buns

Fresh basil leaves (for garnish)

Olive oil (for frying)

Salt and pepper (to taste)

Instructions

Prepare the Chicken: Preheat your oven to 400°F (200°C). Place the chicken breasts in a large zip-top bag and pound them to an even thickness. Season with salt and pepper on both sides.

Bread the Chicken: Set up a breading station with three shallow bowls. In the first bowl, place the flour. In the second, whisk together the eggs. In the third, combine breadcrumbs, Parmesan, garlic powder, and oregano. Dip each chicken breast first in the flour, then in the egg, and finally coat with the breadcrumb mixture, pressing down lightly to adhere.

Cook the Chicken: Heat about 1/4 inch of olive oil in a large skillet over medium heat. Once hot, fry the chicken breasts for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove from the skillet and let them rest on paper towels to absorb excess oil.

Assemble the Sliders: Slice the slider buns in half. Place a layer of marinara sauce on the bottom half of each bun. Add a piece of the fried chicken, followed by a generous sprinkle of shredded mozzarella cheese.

Melt the Cheese: Transfer the assembled sliders to a baking sheet and bake in the preheated oven for about 5-7 minutes, or until the cheese is bubbly and golden.

Finish and Serve: Once the sliders are out of the oven, add fresh basil leaves on top, then place the top half of the bun on each slider. Serve with extra marinara sauce on the side for dipping.
