Chicken Mozzarella Pasta

2 boneless, skinless chicken breasts

8 oz penne pasta

1 cup fresh mozzarella cheese, diced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 medium onion, diced

2 cups fresh spinach

1/2 cup fresh basil, torn

1 cup heavy cream

1/2 cup chicken broth

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Grated Parmesan cheese for serving

Cook the Pasta: In a pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Add to the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and let it rest before slicing it into bite-sized pieces.

      Sauté Veggies: In the same skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes until fragrant and the onion becomes translucent.
