Ingredients
  

1 pound ground chicken

1 cup cream cheese, softened

1 cup shredded cheddar cheese

2-3 fresh jalapenos, diced (seeds removed for milder flavor)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1 cup Panko breadcrumbs

1/4 cup flour

2 large eggs, beaten

Oil for frying (vegetable or canola)

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Mixture: In a large bowl, combine the ground chicken, softened cream cheese, shredded cheddar, diced jalapenos, garlic powder, onion powder, paprika, and black pepper. Mix until well combined.

    Form the Bites: Scoop about 1 tablespoon of the mixture and form it into small balls or patties. Repeat until all the mixture is used.

      Set Up Breading Station: In one bowl, place the flour. In another bowl, place the beaten eggs, and in a third bowl, add the Panko breadcrumbs.

        Bread the Bites: Roll each chicken ball in flour, dip it in the egg, and then coat it thoroughly with Panko breadcrumbs. Make sure they are evenly coated for a crisp texture.

          Heat the Oil: In a large skillet, heat about 1 inch of oil over medium-high heat until hot.

            Fry the Bites: Carefully place the chicken bites in the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes per side or until golden brown and cooked through. You may need to do this in batches.

              Drain and Serve: Once cooked, place the jalapeno bites on a paper towel-lined plate to absorb excess oil.
