Chicken Chimichangas

Ingredients
  

2 cups cooked, shredded chicken

1 cup refried beans

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced onions

1/2 cup diced bell peppers

2 tablespoons taco seasoning

1 tablespoon olive oil

6 large flour tortillas

2 cups vegetable oil (for frying)

Sour cream and salsa (for serving)

Jalapeños and cilantro (optional for garnish)

Sauté Veggies: Heat olive oil in a skillet over medium heat. Add diced onions and bell peppers, sauté until softened (about 5 minutes).

    Mix Filling: In a large bowl, combine shredded chicken, refried beans, sautéed vegetables, taco seasoning, and half of the cheese. Mix well.

      Assemble Chimichangas: Place a tortilla on a flat surface. Spoon about 1/2 cup of the chicken mixture onto the center. Fold the sides over the filling, then roll from the bottom up tightly. Secure with toothpicks if necessary.

        Heat Oil: In a large pot or deep skillet, heat vegetable oil over medium-high heat until hot (about 350°F/175°C).

          Fry Chimichangas: Carefully add the rolled chimichangas to the hot oil, a few at a time, frying until golden brown (about 3-4 minutes per side). Remove and drain on paper towels.

            Serve: Top with the remaining cheese and place the chimichangas on a platter. Serve hot with sour cream, salsa, and garnish with jalapeños and cilantro if desired.
