Chicken Avocado Melt Sandwich

2 boneless, skinless chicken breasts

1 ripe avocado, peeled and mashed

4 slices of whole grain bread

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon fresh lime juice

1/4 cup fresh cilantro, chopped (optional)

1/2 teaspoon red pepper flakes (optional, for added heat)

Instructions
 

Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side until thoroughly cooked and no longer pink in the center. Remove from the skillet and let rest for 5 minutes before slicing thinly.

    Make the Avocado Spread: In a small bowl, combine the mashed avocado, lime juice, chopped cilantro (if using), and a pinch of salt. Mix well until creamy and smooth.

      Assemble the Sandwich: Preheat a grill pan or another skillet over medium-low heat. On one slice of bread, spread a generous layer of avocado mix. Top with sliced chicken and a handful of shredded cheddar cheese. Place another slice of bread on top to form a sandwich.

        Grill the Sandwich: Lightly coat the outside of the sandwich with the remaining olive oil. Place the sandwich in the heated grill pan. Cook for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted. Press down gently with a spatula to encourage melting.
