4 cups fresh spinach, chopped

2 cups cooked chicken, shredded (rotisserie works well)

1 cup whole milk

1 cup heavy cream

6 large eggs

1 teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

8 slices crusty bread (like sourdough or ciabatta), cubed

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Optional: ¼ teaspoon red pepper flakes for a hint of spice

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.

    Prepare the Chicken and Spinach: In a large skillet over medium heat, add the chopped spinach and sauté until wilted (about 3-4 minutes). Set aside to cool slightly. If you want a little extra flavor, add minced garlic or onions while sautéing.

      Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, heavy cream, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) until well combined.

        Layer the Strata: Begin layering the bread cubes in the greased baking dish. Scatter half of the shredded chicken, followed by half of the cooked spinach. Sprinkle half of the mozzarella and a third of the Parmesan cheese over the layers. Repeat with the remaining bread, chicken, spinach, and cheeses.

          Combine and Soak: Pour the egg mixture evenly over the layered bread and chicken combination, pressing down gently to ensure all the bread is soaked. Allow it to sit for about 10-15 minutes for the bread to absorb the mixture.

            Bake: Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the egg mixture is set. If the top is browning too quickly, you can cover it loosely with aluminum foil.

              Cool and Serve: Once cooked, remove the strata from the oven and let it cool for about 5-10 minutes. Cut into squares and serve warm, garnished with fresh herbs if desired.
