Ingredients
  

1 lb boneless, skinless chicken breasts or thighs, diced

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 garlic cloves, minced

3 medium carrots, sliced

2 celery stalks, diced

6 cups chicken broth

1 tsp dried thyme

1 tsp dried parsley

Salt and pepper to taste

2 tablespoons olive oil

Juice of 1 lemon

Optional: fresh parsley for garnish

Sauté the Chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Sauté until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, sliced carrots, and diced celery. Sauté for about 5 minutes or until the vegetables are softened. Add the minced garlic and cook for an additional 1 minute, until fragrant.

      Combine the Ingredients: Return the sautéed chicken to the pot. Add the rinsed rice, chicken broth, dried thyme, and dried parsley. Stir to combine everything.

        Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for 20-25 minutes, or until the rice is tender and has absorbed some of the broth. Check the soup occasionally and stir to prevent sticking.

          Finish the Soup: Once the rice is cooked, stir in the lemon juice and adjust seasoning with salt and pepper to taste. If the soup is too thick, add more broth or water to reach your desired consistency.

            Serve: Ladle the soup into bowls and garnish with fresh parsley if desired.
