1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

2 cups old-fashioned rolled oats

1 cup butterscotch chips

1/2 cup chopped nuts (optional, walnuts or pecans work well)

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

        In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture into the wet mixture, stirring until just combined.

          Fold in the rolled oats, butterscotch chips, and chopped nuts (if using) until evenly distributed throughout the dough.

            Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.

                Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
