1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups rolled oats

1 cup butterscotch chips

1/2 cup chopped pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

      Add the egg and vanilla extract to the butter mixture, mixing well until fully incorporated.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.

          Fold in the rolled oats, butterscotch chips, and chopped pecans if desired. Make sure everything is evenly distributed.

            Use a tablespoon or cookie scoop to drop heaping spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers still look slightly soft.

                Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
