Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup unsalted butter, softened

1 1/4 cups granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract

1 cup chopped fresh or maraschino cherries, drained

1/2 cup sliced almonds

Coarse sugar, for sprinkling (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined. Set aside.

Cream Butter and Sugar: In a large bowl, using an electric mixer, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).

Add Egg and Extracts: Mix in the egg, vanilla extract, and almond extract, blending until smooth.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, beating until just combined.

Fold in Cherries and Almonds: Carefully fold in the chopped cherries and sliced almonds with a spatula until evenly distributed.

Scoop Cookies: Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. If desired, sprinkle coarse sugar on top of each cookie before baking.

Bake Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set.

Cool: Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
