Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped maraschino cherries, drained and patted dry

1/2 cup slivered almonds

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butters and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

Add the Egg and Extracts: Beat in the egg, vanilla extract, and almond extract until well combined.

Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Be careful not to over-mix.

Fold in Cherries and Almonds: Gently fold in the chopped maraschino cherries and slivered almonds until evenly distributed in the dough.

Scoop the Cookies: Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown. The centers may still look slightly underbaked; they will firm up as they cool.

Cool the Cookies: Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

Dust with Powdered Sugar (Optional): Once cooled, you can dust the cookies with powdered sugar for an elegant finish.
